Sweet Potato and Black Bean Enchiladas with Avocado-Cilantro Cream Sauce
Yes. Another sweet potato recipe. Please believe me when I say, "Make this recipe!" I had it ready for Jason last night, and he said "It smells like restaurant food!" I'm pretty sure that's a compliment.
You may have noticed many of my dishes these days are veggie based. I have been convicted lately of buying free-range, organic meats. For many reasons. Mainly it's from a 'Stewardship of our Earth' perspective. The industrialization of food (veggies and meat alike) have led to farms killing so much land, because they are not farming the land properly. Be it not giving livestock enough space, and/or drenching the earth with hormones and the like, it is killing the earth and making it unusable for generations! Not just a year or two... generations! I don't think this is a very responsible way of taking care of the Earth that God gave us. Thus, as a first step, I am trying to do my part in making a change. I also like the idea of supporting local farms, which is easy to do if I start to frequent the market on Saturday.
I have always known that organic everything is more expensive, however, I have always believed we don't need to eat meat on a daily basis, so we are spending more money on free-range, organic meat, and eating it less often. Plus, I get to be more creative in the kitchen, as Jason needs filling meals (especially in the winter, as he works outside in the cold!)
This recipe is by far one of my favourites. I even got to make enchilada sauce! (Which I will share here as well!)
Sweet Potato and Black Bean Enchiladas with Avocado-Cilantro Cream Sauce

For the Enchiladas:
2 cups sweet potato, peeled and chopped small
1 red onion, chopped
2 large cloves garlic, minced
Fine-grain sea salt and freshly ground black pepper
1 bell pepper, chopped
1 (15oz) can black beans, drained and rinsed
2 large handfuls spinach, roughly chopped
2 1/2 cups 5-minute Enchilada Sauce (see following recipe) or store-bought
1 Tbsp fresh lime juice
1 tsp ground cumin
1/2 tsp kosher salt, or taste
5-6 tortilla wraps or gluten-free corn tortillas
For the Avocado-Cilantro Cream Sauce
1/2 cup fresh cilantro
1 medium avocado, pitted
2 Tbsp lime juice
1/4 tsp fine-grain sea salt
1/2 tsp garlic powder
Fresh cilantro leaves for serving
Sliced green onion, for serving
1. Preheat the oven to 350F. Lightly grease a large 3-qt/2.8L) rectangular baking dish.
2. Make the Enchiladas: Place the sweet potato in a medium saucepan and add enough water to cover. Bring the water to a boil, then reduce the heat to medium-high and simmer for 5 to 7 minutes, or until fork-tender. Drain and set aside.
3. In a large skillet, heat the oil over medium heat. Add the onion and garlic and saute for about 5 minutes, until the onion is translucent. Season with sea salt and black pepper.
4. Add the bell pepper, cooked sweet potato, black beans, and spinach. Raise the heat to medium-high and cook for a few minutes more, or until the spinach is wilted.
5. Remove the skillet from the heat and stir in 1/4 cup of the enchilada sauce, the lime juice, chili powder, cumin and kosher salt.
6. Spread 1 cup of the enchilada sauce evenly over the bottom of the prepared baking dish. Scoop 3/4 cup of the sweet botato filling onto each tortilla. Rolld up the tortillas and place them seam side down in the baking dish. Spread the remaining enchilada sauce over the tortillas. If you have leftover filling, spoon it on top of the tortillas as well.
7. Bake the enchiladas, uncovered, for 20-25 minutes, until the sauce is a deep red colour and the enchiladas are heated through.
8. Meanwhile, make the Avocado-Cilantro Cream Sauce: In a food processor, process the cilatntro until minced. Add the avocado, lime juice, sea salt, garlic powder, and 3 Tbsp water and process until creamy, stopping to scrape down the bowl as needed.
9. When the enchiladas are ready to serve, place them individually and drizzle or spread some of the Avocado-Cilantro Cream Sauce on top of each. Garnish with cilantro and green onion, if desired.
5-minute Enchilada Sauce
From The Oh She Glows Cookbook, page 300
2 Tbsp vegan butter or light-tasting oil of choice
2 Tbsp flour (I used spelt)
4 tsp chili powder
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp onion powder
1/2 tsp cayenne pepper
1 scant cup tomato paste
1 3/4 cups vegetable broth
1/4-1/2 tsp fine-grain sea salt, to taste
1. In a medium saucepan, melt the vegan butter over medium heat.
2. Stir in the flour until a thick paste forms. Stir in the chili powder, garlic powder, cumin, onion powder, and cayenne until combined. Cook for a couple of minutes until fragrant.
3. Stir in the tomato paste, followed by the broth. Whisk until smooth and combine. Bring to a low boil over high heat (covered, if necessary) and then reduce the heat to medium to maintain a simmer. Stir in salt to taste and simmer for about 5 minutes (or longer, if desired), until thickened.
The pictures aren't beautiful, because I think I left them in for a few minutes too long... but oh. my. goodness. I cannot wait to eat this for lunch today!

Sweet Potato Crusted Spinach Quiche
As you know I got through fazes of having love affairs with different foods. Right now, I'm lusting after sweet potatoes. I have been making sweet potato, leek soup; oven roasted sweet potato, brussel sprouts and onions; and now, Sweet Potato Crusted Spinach Quiche.
To be honest, I didn't expect this to be anything special. Actually I expected Jason to ask me not to make a quiche for dinner again (as it usually isn't filling enough.) To my astonishment, before he was done his first piece, he said - TWICE - "Sally, this is really good quiche!" And then again the next night as we were eating something different for dinner he said "That quiche you made yesterday was really good!" ... I think that qualifies this meal as a huge success. It also means I will be making it again in the near future.
Sweet Potato Crusted Spinach Quiche

4-6 small sweet potatoes, peeled and thinly sliced into medallions
Olive oil spray
2 large handfuls fresh spinach, roughly chopped
1/2 cup onion, finely chopped
1 clove garlic, minced
6 eggs, beaten
1 tsp thyme
1 tsp oregano
1/4 - 1/2 cup goat cheese
salt and pepper to taste
Peel sweet potatoes and slice thinly with a food processor, mandolin or a very sharp knife. (Watch your fingers!)
Lay potato slice out in a pie dish in a crust-like fashion, spray with oil and bake at 400F fro 15 minutes. After the crust has baked, reduce oven heat to 375F.
Spray a saute pan with oil and saute sliced onion and minced garlic until lightly browned, about 7 minutes. Stir in spinach and saute until wilted and tender, about 4 minutes. Remove from pan, and place on top of sweet potato crust. Sprinkle goat cheese on top of spinach mixture.
In a medium bowl, lightly beat your eggs. Add herbs, salt and pepper, and mix again. Pour eggs over your quiche.
In your oven, bake until the quiche is firm and browned, about 40 minutes.
This tastes the best when it's still warm.

Hot Roasted Artichoke Dip with Spinach and Asiago Cheese with Herbed Pita Chips
Oh man. Christmas is fast approaching, and the 'party food' lists are being completed.
Last night my cousin Mark came for a visit. He is visiting from Alberta until Christmas. Last time he visited I completely ran out of time, and couldn't get together anything worth serving. The chips were stale, the coffee was week, I had to ask someone to pick up veggie dip for the few veggies I had in my fridge... It wasn't tasty. It wasn't pretty. Basically, it was something from my nightmares. I decided to do a 're-do'.
This time I had a beautiful, large veggie tray with dip, some chocolate dipped pretzels, and this artichoke dip with pita crisps that I seasoned and made crispy in the oven. We demolished everything! It was so delicious! And just for the record, I had fresh ground non-weak coffee, tea, eggnog, beer, wine and juice to serve for beverages. I think I redeemed myself.
I have decided to pay closer attention to my 'kitchen inventory' these days. It is forcing me to take into account what I already have, and try to find recipes that include said items. This Artichoke Dip is a result of this searching. I had a can of artichokes left over from some other recipe I tried quite a while ago. Needless to say, I'm glad I did! As mentioned before, we demolished this dip! And this is saying something, because this recipe makes a fair amount of it!
Hot Roasted Artichoke Dip with Spinach & Asiago Cheese
from The Looneyspoons Collections by Janet and Greta Podleski, Hearty-Choke Dip, Page 4
1 can (14oz/398mL) artichoke hearts (not marinated)
1/2 large yellow sweet onion, coarsely chopped
3 large cloves garlic, peeled and cut into thirds
1 tbsp olive oil
Salt and freshly ground black pepper to taste
1 can (19oz/540mL) no-salt-added white kidney beans, drained and rinsed
1 cup light (5%) sour cream (I used Fat Free)
1 tub (8oz/250mL) light garden vegetable cream cheese (such as Philadelphia brand)
1/2 tsp grated lemon zest
4 or 5 dashes hot pepper sauce
1/2 pkg (10 oz/300g) frozen spinach, thawed, squeezed dry and chopped (I used the whole 10 oz package. I love spinach!)
1 cup packed shredded Asiago cheese, divided (You can use Parmesan or Romano cheese instead. I used a combination of the three.)
1. Preheat oven to 425F
2. Drain artichokes and pat dry using paper towels. Cut artichokes in half. Place artichokes in a small casserole dish or baking pan. Add chopped onions and garlic. Drizzle with olive oil and sprinkle lightly with salt and pepper. Mix well. Roast uncovered for 30 minutes, stirring once, halfway through roasting time.
3. While vegetables are roasting, place kidney beans, sour cream, cream cheese, lemon zest and hot pepper sauce in the bowl of a food processor*. Whirl until smooth.
4. Remove artichoke mixture from oven. Reduce oven temperature to 375F. Let vegetables cool for 5 minutes, then add to ingredients in food processor. Pulse on and off until mixture is well blended but still slightly lumpy. Transfer artichoke mixture to a bowl and stir in spinach, a pinch of black pepper and all but 2 tbsp Asiago cheese. Spoon mixture back into casserole dish. Top with remaining 2 tbsp asiago cheese.
5. Bake uncovered on middle oven rack for 30 minutes, until mixture bubbles around the edges and top turns a light golden brown. Remove from oven and let cool for 5 minutes before serving. It's hot! Serve with whole-grain pita chips or crackers.
*I don't have a food processor, so I just used my blender.
Pita Chips

4-5 whole wheat pita breads
1/2 cup olive oil
1/2 tsp fresh ground black pepper
1 tsp garlic powder
1/2 tsp dried basil
1 tsp dried parsley
1. Preheat oven to 400F.
2. Cut all pita bread into whatever sizes/shapes you want your chips to be. Place them on a lined cookie sheet.
3. In a small bowl combine the remaining ingredients and mix well. Brush each pita piece with oil mixture.
4. Bake for 5-7 minutes, or until lightly golden and crispy. Watch carefully, as they brown easily!
I prepared the dip the day before (minus baking it.) Because of this, it was colder from being in the fridge over night, so I baked it for an extra 10 or 15 minutes. It still turned out amazing!
The chips were really yummy. The herbed seasoning was not very strong. They had a nice and subtle taste to them, and made the house smell delicious.

Italian Sausage and Beef Lasagna
I am sick of always saying 'What a busy time!' I feel like such a wussy wimp! Oh well. Things have been busy, but my school pictures job has tapered off and I am able to breathe as I contemplate what is to come next. I am getting caught up with housework and cooking. Laundry is finally manageable, and my kitchen has been thoroughly disinfected and wiped down. Hurrah!
This is the second time I have made this recipe. It's from Eat Shrink and be Merry, makes your house smell amazing, and is delicious! I recommend this to anyone!
Ooh-la-la-sagna!
From Eat Shrink and be Merry, Page 137
8oz (227g) light mild Italian Sausage
8oz (227g) extra-lean ground beef
1 cup chopped onions
2tsp minced garlic
1 tsp dried oregano
1/4 tsp crushed red pepper flakes
1 jar (22oz/700ml) tomatoes with Italian herbs, undrained, cut up
1/3 cup chopped fresh basil leaves (I used Thyme this time)
1 tbsp balsamic vinegar
1/2 tsp freshly ground black pepper
12 uncooked whole wheat lasagna noodles
2 cups light ricotta cheese (16oz/454g)
1 pkg (10oz/280g) frozen spinach, thawed, squeezed dry, and chopped (I used fresh spinach)
1/3 cup grated Parmesan, Romano or Asiago cheese
1 egg
1 1/2 cups packed shredded light mozzarella cheese (6oz/170g)
1. Spray a 9 x 13-inch baking dish with cooking spray and set aside.
2. To make sauce, spray a large, non-stick pot or deep, non-stick skillet with cooking spray. Remove casing from sausage and break into small pieces in skillet. Add ground beef, onions, and garlic. Cook an stir over medium-high heat until meat is no longer pink. Stir in oregano and crushed red pepper flakes. Cook 1 more minutes. Add pasta sauce, tomatoes, basil, vinegar, and pepper. Bring mixture to a boil. Reduce heat to low. Cover and simmer for 20 minutes.
3. While sauce is simmering, cook lasagna noodles according to package directions. Drain. Rinse with cold water and drain again.
4. In a medium bowl, mix together ricotta, spinach, Parmesan cheese, and egg. Refrigerate until ready to use.
5. To assemble lasagna, spread 1 cup meat sauce over bottom of baking dish. Top with 4 lasagna noodles, cutting pieces to fit if necessary. Spread 1/3 remaining sauce over noodles, followed by 1/3 mozzarella. Top with 4 more noodles, 1/3 sauce, all of the ricotta mixture, and 1/3 mozzarella. For top layer: 4 noodles, 1/3 sauce, 1/3 mozzarella.
6. Cover lasagna with foil and bake at 375F for 35 minutes. Uncover and bake for an additional 15 minutes. Uncover and bake for an additional 15 minutes. Let lasagna stand, uncovered, for 15 minutes before serving.

My First Ice Day
Dearest Sally,
IT IS AN ICE DAY!
I woke up this morning feeling joyful and ready for an exciting day in the world of kindergarten. I had wonderful plans for a letter N craft to be followed by a night scene
craft. My dreams were shattered when I got the phone call at 6:30 that is was an ice day. I always wondered what it would feel like to have a snow day as a teacher . . . . it is better than when you are a kid.
Last night was Jesse’s birthday (he is now 26) and I made him a feast! On the menu was Fig and Roasted Walnut Salad with Honey Balsamic Vinaigrette, No-knead Cranberry Focaccia, and Chicken Wellington with Mushrooms and Spinach. I had to work all the cooking
in and around a meeting at the school, which kept the evening exciting. I combined the recipes from two different Food and Drink magazines and it turned out quite well.
Since I have the day off today I will most likely be bothering you to talk about your wedding and such. Have fun! I know I will.
Fig and Roasted Walnut Salad with Honey Balsamic Vinaigrette
Salad
¼ cup walnut pieces
12 dried figs, but into eighths
8 cups spinach
½ cup sliced red onion
¼ cup crumbled feta cheese (I used soft goat cheese)
Dressings
3 tbsp olive oil
2 tbsp balsamic vinegar
1 tbsp honey
1 ½ tsp Dijon Mustard
1 clove garlic
Preheat oven to 350F
Place walnut pieces on a baking sheet and bake for 6-8 minutes or until nuts are golden brown and fragrant. Remove from heat and cool.
In a large salad bowl, toss figs, spinach, onion, roasted nuts and feta cheese.
In a small bowl, whisk together oil, vinegar, honey, mustard and garlic.
Drizzle salad with dressing and serve immediately.
No-knead Cranberry Focaccia
1 tsp instant or traditional yeast
1 ½ cups water, just warm to the touch
2 ¾ to 3 cups all-purpose flour
1 ½ tsp salt
1 cup sweetened dried cranberries
½ cup raisins
2 tbsp unsalted butter
1 tbsp coarse sugar (organic)
Proof yeast by sprinkling it over water in a large mixing bowl and setting it aside for 5 minutes. Then stir to dissolve yeast. Meanwhile, line a 9-inch round or square cake pan with aluminum foil, extending up and slightly over the side.
Add 2-¾ cups flour all at once to the proofed yeast; stir with a large rubber spatula or wooden spoon until flour is absorbed. Dough should be sticky, but not wet. Stir in additional flour if needed. Cover bowl with plastic wrap; let rest for 1 hour until doubled.
When dough has doubled, sprinkle salt evenly overtop; stir thoroughly. Let rest 10 minutes then add cranberries and raisins; mix well into dough.
Brush some melted butter over pan bottom and sides. Scrape dough into pan. Using buttered fingers, pat our to cover the pan bottom completely; top is rough in appearance. Brush with remaining butter.
Adjust rack below over centre; preheat over to 375F. Loosely cover pan with plastic wrap. Let rise for 30 minutes in warm spot on top of or near warm stove. Then uncover; sprinkle top evenly with coarse sugar.
Bake for 30-40 minutes or until richly golden. Cool on rack for 5 minutes. Using foil edges, lift loaf from pan. Remove foil and continue cooling bread on a rack. Cut warm loaf into wedges or slices to serve.
Chicken Wellington with Mushrooms and Spinach
8 cups packed baby spinach
½ cup water
2 tbsp extra virgin olive oil
2 shallots, finely chopped
4 cloves garlic
¾ cup garlic and herb cheese (I used goat cheese)
2 tbsp breadcrumbs
2 cups chopped mushrooms
1-½ tsp herbs de Provence
3 boneless skinless chicken breasts
Pinch of salt and pepper
1 pkg. puff pastry
1 egg beaten
Bring spinach and water to a boil in large nonstick skillet, stirring for about 3 minutes or until wilted. Drain and press out excess water; place in bowl and set aside.
Return skillet to medium heat and add half of the oil. Cook shallots and garlic for e minutes or until softened. Add spinach and cook for 1 minute. Return to bowl and add cheese and bread crumbs. Stir until well coated; set aside.
Heat remaining oil over medium-high heat in same skillet and cook mushrooms and herbs de Provence for 5 minutes or until liquid starts to appear in skillet. Add chicken and cook, stirring for about 10 minutes or until chicken is no longer pink. Season with salt and pepper; set aside.
On a floured surface, roll out pastry to a 26x12 inch rectangle; place on large piece of parchment paper. Spread spinach mixture in centre of pastry leaving about 4 inches on long sides and 2 inches on short sides. Top with chicken mixture. Brush edges with egg and fold up short sides over filling, then overlap 1 long side over filling and lift remaining pastry to reach pastry on top, overlapping slightly, and pinch seam to seal. Brush all over with egg and let stand for 5 minutes to dry slightly
Preheat over to 425F
Bake for about 30 minutes or until golden brown and puffed. Let stand 5 minutes before slicing.

Ding-Dong the Bells are Gonna Chime: Eat Clean Meatloaf
You are so amazing. I just really want you to know that. I was so touched that you and Jesse (despite you're busy schedule) came last minute to Peterborough to celebrate our engagement. (I am getting a little misty-eyed thinking about it.) You are such an amazing blessing in my life. I can't imagine how my life would be without you in it. Thank you thank you thank you.
That being said... here are some recipes that I made on Saturday with no idea that when they were finished I would become 'the future Mrs. Ufkes'! They all turned out amazing. I would recommend each of them. They are simple and delicious!
Turkey Loaf to Live By
From The Eat-Clean Diet Cookbook, Page 202
2 tbsp/30ml best-quality olive oil
2 purple onions or Vidalia onions, finely chopped
1/2 cup/120ml finely chopped celery
Sea salt and fresh ground black pepper
6 cups / 1.4L baby spinach leaves, washed
6 cups / 1.4L baby arugula leaves
1 tsp / 5ml water
1 cup / 240ml basil leaves
1/4 cup / 60ml minced cilantro
4 egg whites + one yolk
1 tbsp / 15ml tomato paste mixed with one tablespoon water
3/4 cup . 180ml low-sodium chicken or vegetable stock
2 1/2 lb / 600ml ground turkey breast (or chicken breast), no skin or fat included, or textured vegetable protein
3/4 cup / 180ml oat bran (if you don't have oat bran use oatmeal that has been ground in the blender) - uncontaminated for gluten free
1/4 cup / 60ml ground flax seeds
Cooking spray
1. Preheat oven to 375F / 190C. Make sure there is a rack in the center of the oven. Heat olive oil in a nonstick pan and cook onions and celery until they are translucent but not brown. Season with salt and pepper and transfer to a small bowl to cool.
2. Add baby spinach and arugula leaves to the pan with one teaspoon of water. Cook until the greens are wilted. Remove from heat and let cool. Add basil and cilantro to the wilted greens and mix well.
3. In a large bowl add egg whites, yolk, tomato paste mixture and stock. Mix well. Add ground turkey or TVP, oat bran and flax seeds along with cooked onions and celery. Spray clean hands with cooking spray and mix the turkey concoction well.
4. In a 10" loaf pan coated with cooking spray, place half of the turkey mixture, spread evenly, using clean hands, transfer wilted greens and herbs to loaf pan. Distribute evenly on top of the turkey mixture already in the pan. Now place remaining ground turkey mixture on top of the wilted greens. Make the top smooth with your hands.
5. Bake the turkey loaf for 1 1/2 hours or until the meat thermometer registers 160F / 71C. Remove loaf from the oven and let cool for 15 minutes so everything sets properly. Once cool, remove loaf from pan and cut into one-inch-thick slices using a very sharp knife. Arrange on a serving platter and serve immediately. Refrigerate leftovers and use for lunch.
I also made Stuffed Red Peppers which I really liked. But we forgot to take pictures... so you will have to wait until the next time I make them to see pictures and get the recipe...
Goat Cheese and Cracked Black Pepper Bread

I don't have the recipe for this with me now, but it's just out of the little booklet that came with the Bread maker. This was the very first time I had ever made bread. Even though it's considered cheating (in many circles...) I decided to use the Bread maker... and after using it I have decided I am in love with it.
It was after these pictures were taken that I turned around and gave Jason a big hug and said 'This is the perfect day' only to have him respond: 'You know what would make it even more perfect? If you said you'd marry me' while pulling out a ring from his pocket and getting down on one knee.

Stuffed Fillet Steak, and Savory Cheese and Bacon Muffins
I hope your holidays have been everything you hoped them to be. I found mine to be busy, but perfectly balanced with relaxation. As always, there were many family dinners, and friends in from out of town. It was all wonderful.
Yesterday was my first day back to work since the 23rd. Jason and I had planned a dinner to make on Sunday night, but other things came up, so it was pushed to last night. We got the recipes from this great book that Robin gave me for my birthday. It's called Mix & Match Meals. To fully appreciate this book you really need to go pick one up. When you open it, the pages are split horizontally in three sections. The top one: appetizers, the middle: entrees, the bottom: desserts. So as you pick which one you want for each stage of your meal, you can flip through all the sections separately and in the end have all three recipes open at the same time. This means the process of making your grocery list is greatly simplified.
The Menu: Stuffed Fillet Steak with chili and parsley butter, with Savory Cheese and Bacon Muffins.
I have mixed feelings about this meal. The muffins were surprisingly amazing. If you make them with whole wheat/grain bread crumbs they become a healthier option. The steak was... interesting. I'm not sure I'm a fan of a cream cheese filling for a steak. Maybe if it was whipped with some fresh herbs and spices? Or spinach? Or feta and/or goat cheese instead? It needed something else. The butter I would put more chili flakes in. That being said, it would be delicious spread on some fresh bread.
All in all, it was a pretty plate.
Savory Cheese and Bacon Muffins
adapted from Mix&Match Meals, Page 108 (starters)
5 1/2 oz (150g) Canadian bacon, sliced
7oz (200g) Cheddar cheese, cut up into small cubes
1 1/4 cups whole wheat/grain bread crumbs
1/2 bunch of scallions, finely chopped
3 eggs
1/2 cup milk
salt and ground black pepper
Pam for greasing
1. Fry the bacon until cooked but not too crispy, then cut into bite-sized pieces. Mix together the cheese with the bread crumbs, scallions, eggs and milk. Stir in the bacon.
2. Season generously with salt and pepper, then spoon into 4 buttered ramekins (or into your muffin trays). Bake in the oven at 375F (190C) for about 25 minutes until risen and golden. Serve hot or cold.
Stuffed Fillet Steak with Chili and Parsley Butter
adapted from Mix&Match Meals, Page 64 (Main Course)
4 sirloin steaks, about 8oz (225g) each, cut to a minimum 1 inch (2.5cm) thick
4 1/2oz (125g) light cream cheese
1 tbsp olive oil
sea salt and freshly ground black pepper
for Chili and Parsley Butter
5 tbsp salted butter
1 tsp hot red pepper flakes
2 tbsp finely chopped flat-leaf parsley leaves
Spinach to serve
1. To make the chili and parsley butter, mix together all the ingredients in a bowl until well combined. Form into a sausage shape, and place in a piece of parchment paper. Roll up into a tube, twist each end of pepper, and chill for 30 minutes.
2. Heat the barbecue until hot. Take each fillet steak and, using a thin pointed knife pierce the side and move the knife from side to side to create a cavity, trying not to increase the size of the opening too much. Place a portion of cream cheese into each opening. Do not over stuff.
3. Grill the steaks on the barbecue over high heat for 3 minutes on each side, turning once. Set on a plate, and let rest for 5 minutes.
4. Serve on top of fresh spinach with a dollop of Chili and Parsley Butter for garnish.

Jamie Oliver's Awesome Spinach and Ricotta Cannelloni
Over the past couple months, Jason and I have been getting to know his cousin Noel and his girlfriend Sarah. They are an hysterical couple who love having fun and laughing with and/or without reason.
Last night they had a joint birthday party and we found ourselves privileged with an invite. They decided on an Italian themed potluck dinner followed by some retro glow-in-the-dark bowling. I was thrilled to be assigned to provide a main course. In a flurry of excitement I ripped into my copies of Jamie's Italy, Jamie's Meals in Minutes and many other favourite 'go-to' cookbooks. I ended up finding the predestined recipe on his website. Please note as you're reading through the ingredients and looking at my pictures: I doubled the recipe! One single batch will serve around 6 people. I needed enough for 8, so I doubled the recipe and we ate a portion of it before the party to make sure it turned out as delicious as I planned.
Aaaaaaand it is!
It is so Italian, so delicious and it doesn't take forever.
The only thing I would like to point out is the part when you have to get the filling into your cannelloni noodles. Jamie says it's easy. And I think if this is a regular occurrence for you it would become easy... If it's your first time (as it was mine) it's a little tricky. The important thing is: it's do-able! So no worries. It's worth it all!
Awesome Spinach and Ricotta Cannelloni
adapted from Jamie's Dinners
2 knobs of butter
olive oil
2 cloves of garlic, peeled and finely sliced
a large handful of fresh oregano, roughly chopped
¼ of a nutmeg, grated
8 large handfuls of spinach, thoroughly washed
a handful of fresh basil, stalks chopped, leaves ripped
2 x 400g tins of good-quality plum tomatoes, chopped
sea salt and freshly ground black pepper
a pinch of sugar
400g light ricotta cheese
1 handful of freshly grated Parmesan cheese
16 cannelloni tubes, oven ready
200g mozzarella, broken up
for the White Sauce
1 x 500ml tub of light Greek Yogurt
3 anchovies, finely chopped
2 handfuls of freshly grated Parmesan cheese
Preheat the oven to 180ºC/350ºF/gas 4. Then find a metal baking tray or ovenproof dish that will fit the cannelloni in one layer so it's nice and snug. This way you'll get the right cover of sauce and the right amount of crispiness on top. When I cook this at home I just use one pan to cut down on lots of washing up! Take your metal tray or a saucepan, put it on a high heat and add your butter, a drizzle of olive oil, one of the sliced garlic cloves, a handful of oregano and the grated nutmeg. By the time the pan is hot the garlic should be soft. Put as much spinach as will fit into the pan. Keep turning it over; it will wilt quickly so you will be able to keep adding more spinach until it's all in. Moisture will cook out of the spinach, which is fine. By cooking it this way you don't lose any of the nutrients that you would if boiling it in water.
After 5 minutes, put the spinach into a large bowl and leave to cool. Place the pan back on the heat, add a little olive oil, the other clove of sliced garlic, your basil stalks and the tomatoes. Bring to the boil, then turn the heat down, add a pinch of salt and pepper and the sugar, and simmer for about 10 minutes, until you get a loose tomato sauce consistency. Then take the pan off the heat and add the basil leaves.
By now the spinach will have cooled down, so squeeze any excess liquid out of it and pour this back into the bowl. Finely chop the spinach and put it back into the bowl. Mix it with the liquid, add the ricotta and then use a piping bag to squeeze the mixture into the cannelloni. You can make your own piping bag by getting a sandwich bag and putting the spinach mix into the corner of it. Then twist the bag up and cut the corner off. Carefully squeeze the filling into the cannelloni tubes so each one is filled right up.
Lay the cannelloni over the tomato sauce in the pan. Or you can pour the tomato sauce into your ovenproof dish and lay the cannelloni on top. To make the white sauce, mix together the Greek Yogurt, anchovies and the 2 handfuls of Parmesan with a little salt and pepper and spoon it over the cannelloni. Drizzle with olive oil, sprinkle with the remaining Parmesan and the mozzarella pieces, and bake for about 20 to 25 minutes until golden and bubbling.

Looking Back: The Favourites of 2011
It is that time of year again. As January 1st sneaks up on us, we are given these few relaxing moments to reflect on the year that is about to close behind us.
Many things have happened in these past 12 months that neither of us dreamed would come to be. Jess moved to a different city, received a real teaching position, and got engaged! Sally did her first 30 Day Hot Yoga Challenge, started learning Spanish, and successfully paid off half her student loan (and is still going strong!) Throughout everything we bonded and celebrated together. We also were blessed with an amazing community willing to give as much support, encouragement and love as we needed in whatever form they could. We are truly blessed, and inspired by you all.

Sunday Brunch
First: extra prayers to you today as you dive into your first kindergarten class! I am so proud of you!
The weather is getting cooler. This past Labour Day Weekend flew by as Jason and I enjoyed the coolness of the air while listening to Jim play drums at the Black Horse Pub in his friend's band, sipping on some red wine, reading The Curious Case of Benjamin Button, and making warm and comfy foods.
Ken (Jason's Dad) and Carolyne were in town for Saturday and Sunday. When they got back from church on Sunday I had just pulled out of the oven my first ever frittata!
It was a perfect beginning to an autumn Sunday. Golden onions, cherry tomatoes, fresh spinach and basil all wrapped in ricotta cheese and fluffy baked eggs. What a treat! Jason made a delicious fruit salad for a beautiful side. I told Jason that 'I love when you can put as much time into breakfast as you do dinner... it seems to be so enjoyed by everybody.'
I can't wait to hear all about your first day in the classroom! I love you and miss you so much.
